Yield: Serves 4-5 people

Total time: 6 hours and 15 minutes


2 lbs. Chicken Breasts

14 ounces Chicken Broth

1 can Black Beans

1 can (drained) Rotel

1 can (drained) Corn

1 tsp. Garlic Powder

1 tsp. Onion Powder

1 tsp. Cayenne Powder

1 tsp. Cumin Powder

1 tsp Salt


Pour the broth into a crockpot, add all seasonings and stir. Place chicken breasts and all remaining ingredients into the crockpot. Cook on high for 6 hours. Shred the chicken 30 minutes before completion.

After 6 hours, serve over tostadas, rice, or tortillas.

Lettuce, Tomatoes, Scallions, Onions, Cilantro, Sour Cream, Avocado, & Cheese
