BACON LEEK PASTA

Ingredients
1 lb. Rigatoni Pasta
3 Leeks
2 lbs. Bacon
1 cup Heavy Cream
1 cup Parmesan Cheese
Black Pepper
Salt
Garlic Bread
Directions
Cook the bacon and keep some of the grease. Slice the leeks thinly & sauté in the bacon grease. Once the leeks have started to caramelize, add heavy cream & stir until it starts to thicken. Then, add salt, black pepper, bacon & parmesan cheese. Once the pasta is cooked, add pasta to the cream sauce. Do not drain all of the pasta water. Add a few spoons of pasta water to the pasta & cream sauce to thin the sauce out a bit. Add black pepper, parmesan, or pasta water until you like it. Heat garlic bread. Enjoy!
